This has become my go to place for meat. I will still use other places in a pinch, but whenever I can I prefer this place for several reasons.
1. They will cut to order. I like to get my chicken more or less deboned (exception of drumsticks and wings), but I want to hold on the bones and carcass to make broth. They can do this to order. They also us
2. They do a great job with lamb (and they source from either Elysian Fields or Jamison Farms--I can't remember which), they will trim off the fat as I like, and then give me the fat to grill and give to my canines--which they really love.
3. They make some amazing salts and rubs (Cherry smoked salt is amazing)
4. Good guys. Knowledgeable, happy to provide advice.
5. Can make you ground bacon.
