One of the Underground Butcher's butchers sports one of the most luxurious and masculine beards I've ever seen. He wields his platinum hacksaw with skill and aplomb like a modern day Viking swordsman. We call him "Beardy".
Let me tell you this: I've gone to the Conscious Carnivore on multiple occasions looking for a specific cut. They can get it for you, but it will take a couple days. I then go back to my truck disgruntled and call the Underground Butcher and every single time they say come over now and get your meat! I should probably start at the UB from now on.
Plus, Beardy makes the best sandwiches, kimchi, giardiniera, macarons, and fresh & cured sausages. And he has WINE IN CANS! He's so awesome.
I've never found a stray beard hair in any of my preparations, but I would welcome and celebrate the discovery of one of these silken threads at any time. Beardy forever!
