  • We have been waiting anxiously to try Mindful Brewing since they started construction. We wanted to give them time to work out the glitches. We went Wednesday for happy hour. When we arrive at 5:30 there was barely anybody there. By the time we left, the place was starting to really fill up. Our waitress was very friendly, helpful and attentive. She knew the menu, both food and drink very well. I believe her name was Katie. We loved that we could get little samples of the beers to try without having to commit to a big one. The food wasn't good, but it wasn't horrible either. We ordered the margarita pizza, the grilled cheese sandwich and wings. We weren't impressed with the pizza, the ratios seemed way off. The tomatoes seemed canned and weren't drained very well so the excess liquid ruined the majority of our pizza. There were also pieces of tomato that were as big as my palm. The crust was very thin in the middle, but thick around the outside. The mozzarella cheese was sliced substantially thicker than the crust. It also lacked flavor. We hoped that a sprinkle of salt would bring out the flavor, but we're disappointed that the salt grains were the size you would normally put through a grinder. It was very unpleasant to bite into large chunks of salt. The fries were like I've never had before. Think thick cut fries, that were in a takeout container to cool and then reheated. They weren't the fresh-cut fries that I was expecting. The grilled cheese wasn't anything spectacular and had an overwhelming butter flavor. The wings were typical wings. The service was great, the atmosphere is trendy, modern and unique, but we were very disappointed with the food. We will come back if invited, but would personally pick to go elsewhere. I also found it extremely odd that new construction only has a single bathroom for women on the main level. There is a sign stating that additional restrooms are on the 2nd floor, but I didn't venture up there. Women notoriously have to wait in long lines for restrooms, so only have a single restroom to service the female guests dining in the main restaurant area and the bar seems a little strange.
