Ramen KoBo is a small noodle joint with a significant wait time during prime lunch hours. We waited as a party of four for Saturday lunch for about 20-25 minutes before being seated. The service was great and friendly, so let's cut right to the ramen. We had the tonkatsu and miso ramen plus a small rice bowl with salmon roe. Everything was delicious. The tonkatsu broth is on point! I added black garlic oil for an additional $1.00 which made the broth a lot more earthy and savory. It is an intense flavor so I wouldn't recommend for those who prefer a lighter broth. You can add extra toppings for additional cost to what they already provide. The noodles had a great texture. BEWARE the spice level - I asked for mild and it felt like medium to me - if unsure you should just ask for the hot sauce on the side.
The only suggestion I would make is to give one more slice of meat for the standard ramen bowl. One thin slice is a bit stingy. But the rest of the food is great and if you like noodles (and don't care too much about meat) you will enjoy this place.
