| - Updated review after 2 years. Joel Robuchon in Las Vegas remains our favorite restaurant of all time. I highly recommend everyone put the Grand Degustation Menu on their bucket list for an epic, unforgettable meal. As of this writing, you can easily cover dinner, drinks, tip and tax for 2 by selling a single share of Amazon Stock.
For this review however we took a different route with their Express Ala Carte Menu. The base is $250/pp (instead of $445/pp for the full 14-17 course tasting menu), and you get to choose 2 apps, 2 mains, and 1 dessert. Each person can customize the selections, and you still get unlimited bread in the beginning and candy at the end. Portions tend to be bigger than in the Tasting menu for the same item - so you will still get full!
Our selections (note some will have surcharges that add to the $250 base)
Apps:
* We got two caviar dishes. I prefer the Le Saumon with a meatier salmon tartar base. For more delicate, eggy dish but with nice texture contrast, the Le Caviar Imperial is also good.
* Le Homard was an amazing lobster pot-sticker like dish but with the wrapper made of thin turnip. Definite Asian-inspired and the lobster was so delicate!
* Le Potiron was a pumpkin cream soup served in a pumpkin, with big thin slices of white truffle for added umami!
Mains:
* My wife loved Le Black Cod, bringing back Asian flavors of sweet miso soy to a soft, melt-in-your-mouth fish.
*I loved Le Saint Pierre, a firmer John Dory filet with serious crunch from the tempura shiso leaf. I also liked the thick, briny squid ink risotto.
* Le Boeuf offers a few good-sized pieces of super-tender, well-flavored rib eye. The mushroom ravioli had a surprise with some foie gras inside. Meat and potato dish, but when the mashed potato (90% butter/10% potato/100% awesome) is from Robuchon, its definitely a must-get dish.
* Le Veau is braised veal cheeks, with the tender, savory meat balanced by the nice, gingery Thai broth which really cut some of the richness away.
Desserts:
* The lightest dessert is probably the Le Parfum des Iles, similar to a banana colada if such a thing existed. Sweet, sour, and foamy.
* For an absolute gorgeous dessert that looked like something from Super Mario, Le Chocolate offers a chocolate-cherry masterpiece that looks like a colorful mushroom in the garden.
Happy to maintain my five stars for Robuchon, and in my opinion it remains my favorite 3-Michelin restaurant. The ala carte menu is a nice change of pace if you want to customize the menu and want a slightly lighter dinner. However you will still leave the restaurant full and satisfied. More time for you to catch an evening show or to gamble!
