  • The Practical series, and advanced Practical series were the most enjoyable classes I've ever taken. Chef Pascal is funny, knowledgable and a delight to learn from. I learned so much about methods of cooking various meats, vegetables and sauces, which I have now incorporated into my every day cooking. The advanced series taught me how to put together complete meals, from the combination of foods, to coordinating the prep and cooking times. All in all, the CCA is a terrific school for the home cook and aspiring chefs!!
