| - The wife and I dined at Searsucker on a Sunday night. We had no problem getting a table for two at 7:30. We started off with a round of drinks. Searsucker's cocktails and house-made infusions were solid. I had the Kinda Old Fashioned ($18) made with Jack Single Barrel whiskey, Montenegro Amaro, Ancho Reyes liqueur, sweet vermouth, old fashioned syrup, and bitters. It was boozy and bitter with the right amount of sweetness. The wife's Jalaberry Strawpeno ($13) was a jalapeno and strawberry infused tequila with lime and agave. It was a nice, fresh take on a margarita. For our food, we shared orders of the Blistered Shishito Peppers ($11), Calamari Steak ($16), and Fish & Chips ($42). All of the dishes were tasted good to outstanding. The Fish & Chips, a beautifully presented fried whole branzino with waffle cut, sweet potato chips, was excellent, but I felt a bit overpriced. The Blistered Shishito Peppers were the closest thing to a miss for me. They were blistered, but possessed a wilted texture that seemed like they were more steamed than roasted over a fire or in a hot skillet. However, the Calamari Steak, thick cuts of calamari deep fried to a perfect fork tenderness and topped with a chili honey glaze, was the standout dish and the best fried calamari dish I've ever had.
Searsucker was a pleasant surprise. Frankly, given the lineup of celebrity chef-driven restaurants in Las Vegas, let alone in Caesars Palace, Searsucker seemed to me to be somewhat of an afterthought, a backup plan restaurant choice. Searsucker deserves better than that as they're easily Caesars' best bet for tasty comfort food.
