I stroll off Fremont to Carson Ave on every visit to Las Vegas. EAT is a must for any downtown Vegas vacation. The food is pretty simple. Most of the food is just breakfast and lunch classics prepared with the highest level of quality ingredients and short order cook skill. There are definitely a few inventive dishes that speak to the chef's talent, but for the most part the food at EAT doesn't reinvent the wheel. There is something to be said for simplicity. In my last few visits, I've ordered the fantastic Pozole as a starter. After that, you really can't lose with any of their selections. I particularly like the Shrimp and Grits for Breakfast and the DWBLTA for lunch.
After I've enjoyed my meal, I always buy a bag of their house coffee beans for the road. I like to continue enjoying EAT's bean juice for weeks after my trip.
