Great local/farm butcher in the Valley. I use them for some regular cuts - but mostly for sausage/charcuterie making. They have ready-to-grab items right in the entrance, or can custom make whatever you need. Order bulk meat too for your freezer. Nice people, clean shop.
Biggest challenges with them are the wait list for certain "hot" items like pork belly or pork jowl fat. But when it comes, it's like Christmas.
