I finally found a corkage fee so ridiculous even I won't pay it! Would you believe they have the audacity to charge FIFTY DOLLARS PER BOTTLE!?
To add insult to injury, the cocktails (while good) are both overpriced and undersized. I guess it's all part of the Devine Plan - you're supposed to stay sober and focus on the food, the service and the ambiance ;-)
The ambiance matches the excessive price tags perfectly; it's an upscale, modernized rendition of an old school, traditional steak house. If you've got your tuxedo or white dinner jacket handy, you'll feel right at home; you will not feel overdressed in a suit and tie.
The service here is very attentive, but their system leaves a little something to be desired. They employ a tag-team approach, with one server being "lead" and the other an "associate." The hand-offs between them made me think of an old-school comedy team, but they somehow managed to carry it off. While our "lead" had all the charm and poise of an IRS Auditor, his "associate" was sophisticated, charming, and gave great drink recommendations (though he didn't' warn me I'd have to order CUT's cocktails three at a time to equal the size of a normal cocktail).
The star of the show at CUT is unquestionably the food; the steak in particular! Here's what we had:

I was hoping this dish would rock my world, but it didn't; it was good, but not as awesome as I'd hoped.

Part of CUT's "A" game for sure - this dish is completely delicious, and a perfect complement to the steaks.

This steak sampler wasn't on the menu when we got to the restaurant, but I'd seen it online and asked for it. All three cuts were exceptional:
o U.S.D.A. PRIME, Nebraska Corn Fed, Dry Aged 35 Days, 4 oz
o American Wagyu Beef From Snake River Farms, Idaho, 2 oz
o True Japanese 100% Wagyu Beef from saga prefecture, Kyushu, Japan 2 oz
However, I was surprised that it was the USDA cut (the most inexpensive of the three) which tasted best. These steaks were entirely other-worldly, and worth the price of admission all by themselves.
For me, I think the upscale ambiance, attentive service, and excellent food counterbalanced the ludicrous corkage fee, skimpy cocktails, and hefty price tag well enough that I have no qualms rating this a four star restaurant.
Will I come back? The next time I'm in Vegas after robbing a bank and attending an AA meeting, I'll be back for sure! ;-)
