Okinawan cuisine! What a find.
I can't wait for Summer, when Satoya offers Goya chanpuru. Japanese food is all about "Shun", a peak season for an ingredient, in this case it's Goya, or bitter melon. While waiting for the shun, I'll eat soki soba here.
Their sushi is also great but if you want to truly appreciate Satoya's potential, try Okinawan cuisine. Ask the server and you get the idea.
