| - It may be impossible to find good pit bar-b-q outside of Texas. I'm still hoping, but have not found it yet. Fair warning, I'm hard to please when it comes to bar-b-q'd brisket. In Southern Texas, the pit master starts cooking at 10PM to have meats ready for lunch the next day.
I've heard a lot of good things about Bobby Q from family members. Was able to stop for a Saturday lunch today. Ordered the two meat platter with cole slaw and potato salad.
Nice attentive waitress brought out some cornbread muffins. I grind my own corn meal and cook buttermilk cornbread in a cast iron pan I've had for twenty years. Tough to compete with my cornbread. These muffins have blenderized corn kernels to give them a little flavor. They were the classic sweet cornbread. Sweet with a little bit of canned corn taste. Oh well, I came for the bar-b-q.
Sliced brisket and sausage was served on a platter with sides in small bowels. Oh no! There was sauce drizzled on the brisket and sausage. It's almost heresy to put sauce on good bar-b-q. Definitely an insult to the pit master.
The prime brisket was very tender. Brisket is a tough cut of meat that has to be gently cooked for a long time to coax out the tenderness and flavor. Even then it has to be cut across the grain to be tender. These thick slices were amazingly tender. There was no smoke ring. Tender bland brisket. The sauce was the star of this plate. Crash and burn.
The sausage had grill marks on the sliced sides. Reheating on the grill did not help the flavor. It was a little spicy, but had very little flavor from smoking. Again, the flavor was from the sauce that covered it.
Cole slaw had chopped pecans on top. Nice touch as I love pecans. If the pecans were browned in a little butter, it would have helped a lot. Otherwise, pretty plain cole slaw. OK, but not special.
I've had awesome potato salad. This Bobby Q's version was OK. Good, but not anything to write home about.
So, I continue to be a disappointed Texan. Guess I'll have to invest in a smoker.
Go to Bobby Q's for good service, quality tender meat, and good bar-b-q sauce in a nice atmosphere.
