I've been to Prime a couple times now and both times were enjoyable.
Besides the food (which I will get into shortly), I want to highlight the service.
The servers and other restaurant staff here are professional, accommodating and most importantly, have good timing on when to be at the table for any needs. I don't think this can be trained, and believe it is the servers' experience and intuition after many years in the industry.
On to the food... Standouts:
Foie Gras - if you love Foie, you will love theirs. Perfectly seared and flavored, with nice acidity on the plate to complement.
Carpaccio and Tartare duo - This is the best of both worlds. When I see Carpaccio and Tartare on the menu, I usually have an inner battle on which one to choose. Well Prime must have thought of this too and decided, why not put both on a plate! The tartare and carpaccio are fresh and the presentation is beautiful with the latticed cream (but side note, a bit too saucy for me and I would ask for less sauce or on the side next time).
Sea Bass entree - It's not a petite piece! It is a large piece of fish and cooked well.
Truffled Mash - Buttery with bits of Black Truffle folded in and garnished on top!
Next time I will be back for the Dover Sole as (I was told) they de-bone right in front of you.
All in all if you are looking for fine dining and great food, Prime is solid.
I will be back and will probably bring the family when they are in town again.
