Olivastro is a new locally-owned olive oil and balsamic shop in the strip on the NE corner of 7th Ave & McDowell. All of their oils and vinegars are available for sampling, and if you decide to buy some, they bottle it on the spot.
I'm not really much of a vinegar person--before today the only vinegar in my house was a big jug of cheap white vinegar, which I use for cleaning purposes ... --but all of the balsamics I tried were fantastic. I ended up buying a bottle of their honey-ginger white balsamic and one of the blackberry-ginger dark balsamic. (Apparently I like ginger.) Make sure to try the Chocolate Balsamic; I'm not sure what I'd use it for--some kind of dessert far above my cooking ability?--but it's definitely worth sampling.
I also bought a couple bottles of their olive oils, which I thought were on-par-with or better than Queen Creek Olive Mill's (with, of course, the huge bonus of Not Having To Go To Queen Creek).
The owner in the shop was friendly and helpful, and as far as prices, I thought it was pretty reasonable: 375mL bottles are $16 or a 200mL bottle is $12.
