I took the decorating course and found it to be very informative but a lot of the instructors were very snobby. They are good at what they do but as teachers most of them are failures. They usually have different instructors for different fazes of the course which leads to conflicting advice and confusion. If they don't really like you they are total pricks.
They will tell you the cake or any baked good is acceptable and no more work needs to be done on it and then turn around and give you a poor mark.
Near the end of the course most of the people just had enough of the schools and were very happy that the course ended.
If anyone is thinking of making a career from pastry arts and baking I recommend George Brown or Le Cordon Bleu. Don't waste you time with the yahoo instructors.
