| - You want it, they got it: Yanahibas, Gyutos, Santokus, Nakiris, Petty, Bunka, Deba, Honesukis, etc. The shop has a rad presentation, very minimalistic; they focus on the blades. The selection is expansive. They have hand hammered knives, and they have stamped knives. They have carbon clad knives, and they have mono stainless knives. They have Wa handle knives and they have Western handle knives. They have hitachi steel knives and they have other manufacturers steel. Cory is very knowledgeable and doesn't up-sell people on anything. He tells is how it is and let's you make the decision. He's also a master sharpener - I advise taking his knife sharpening class if you want to maintain your own blades. They also sell other kitchen goodies: tools, blocks, whet stones, aprons, etc. Even if don't know anything about kitchen tools it's a fun place to visit.
