The first time I came here my boyfriend asked if I wanted to go to sushi and told me it was all you can eat for $25. Coming from California I looked at him like he was crazy and said I don't think so... but we went and Yama sushi is awesome!
It is one of my two favorite sushi places in Vegas because 1) it's all you can eat, almost a must in Las Vegas 2) the service is pretty quick once you get seated and 3) they have soft shell crab as an appetizer. The wait can be long for Yama which is why I always put my name in and then go check how the wait at Sakana (right across the street in the target shopping center is) is. Once seated it's all you can eat for about $25/person, including nigiri, sushi rolls, appetizers and dessert. The drinks will run you about $5-10/each for sake/beer/etc.
A lot of people complain that you don't neccessarily have the same server the whole time, but I like that you have lots of people helping you - it means you get your food and drinks faster! My favorite appetizer is the soft shell crab appetizer and me and my boyfriend both love the double dragon roll. Usually I end up ordering a couple seaweed salads and then a lot of salmon and yellowtail nigiri.
You can't go wrong for the price!
