Location can be crucial for restaurants and in this case, Ramen KoBo is tucked away. Fortunately, It is well seen but the road to enter the shopping center it is located in, is in all honesty, awful due to the proximity being so close to the freeway; cars are running fast and the roads are large and difficult to cross.
The interior is very modern with wooden paneling and matching tables and chairs. The lights are chain hung and include a line of studio bulbs which keep the venue well lit but with a warm tone. The bar area can seat quite a few patrons and is spacious despite the small size of the restaurant itself. It's very pleasing to the eye, with the black framing very clean. The decor is classic to that of most Japanese restaurants, with banners hung above the bar area.
FOOD: 4.8/5
The noodles here are fresh made, with a large glass window to see the process. There is a machine that essentially flattens the dough and slices it up into portions. Because of this, the noodles are chewy and have a great buoyant texture.
The way the menu is situated makes it very easy to read and pick the type of broth you would like, how spicy, and any extra toppings that you would want with your ramen which includes adding a portion of noodles.
I ordered the shoyu (chicken broth) which tends to be hotter. In the case of soup, it keeps the ramen at a nice temperature without cooking through the vegetables. The ramen comes with bamboo shoots, chaysu pork, ground meat, chili slices, and other typical vegetable ingredients. They were all fresh and still contained a light crunch which was pleasant. I also added a soft boiled egg. The extra toppings can cost anywhere from .50 to 2.50.
I also ordered the chaise fried rice. Ramen KoBo generally has some of the best made chaysu I have come across in Las Vegas, very tender and not try at all. The marinade is delicious but not overpowering that it would ruin the quality taste of meat. The fried rice's presentation was a bit scattered, but tasted good with the chopped ingredients still intact enough to have a variety of texture with the rice.
SERVICE: 5/5
The service was excellent, with the waiters and waitresses attentive to our table. I overheard the servers actually helping out certain individuals when menu items were questioned as well. Overall, everyone was friendly, well adjusted to their surroundings in the case that the restaurant is small and can be hard to maneuver around in, and attentive to the customers.
OVERALL EXPERIENCE: 4.9/5
Honestly, I have been to this location before and was disappointed in how salty the broth was. However today the taste was perfect, not too salty or bland and I was very pleased with the overall taste, service, and of course, the cute Halloween decorations. Ramen restaurants have become abundant in Las Vegas, and with that, competitive advantage is important. This location is supposed to be a sister of Monta, and I was not fond of that location's ramen. However, KoBo has impressed me with today's service. I will definitely be back soon.
