While I felt like it was mostly just the two fast takeout level versions of the dishes piled together without any consideration for each other, the amount of food I received was still rather spectacular.
I just wanted something amazing. I've been to The Happy Truck on several occasions now and I've always enjoyed my meals, but never really been blown away by it either. I do like that the menu always changes. You never quite know what to expect when they're around, so if they're the only food truck in sight, you might have a pretty good chance of getting a decent lunch.
Also, if you were thinking of hiring a singular food truck that could meet the needs of the masses for an event, The Happy Truck would be a pretty solid bet for you, instead of the majority of other trucks who specialize in one highly specific item all the time.
While the changing menu is their strong point, it's also sort of their shortcoming. I can't help but feel like The Happy Truck is kind of missing that "thing" that makes them special. I almost sort of want them to discover themselves and come up with the best _____ in Calgary. Don't event care what it is. I hope you find yourself a bit, Happy Truck. If you do, I have no doubt I'll be your biggest fan!
