I took the Practice Series. Great, life-changing experience, as exaggerated as that might sound! Chef Pascal is passionate about cooking and teaching and is entertaining. Most culinary schools/programs/classes' bottom lines are for deep profits but the environment here is very different and Chef definitely exudes the French's passion for cooking. If all of us Americans learned to cook well and enjoy it, I'm convinced we would have a lower obesity rate in this country. Next up is to read "French Women Don't Get Fat" and maybe it'll be a good course accompaniment... =D Thank you, Chef Pascal!
