The food here is a mixed bag - some really outstanding dishes on the same menu as the mundane. That statement is probably true for nearly any restaurant (in Vegas or otherwise). But the problem here is missing expectations given the high expense of the meal that really creates a problem for me.
Sibuya is basically a Japanese "tapas" house. A varied menu of small tasting-size dishes at high prices (somewhat exorbitant in my view, but probably on par for Vegas). $30 -$40 plates is more the norm than the exception.
For $120 head (w/o tip or drinks), we elected for a prix-fixe tasting course of 10 different items. Some offerings were quite unique like the Iberico Pork Tataki were just flat-out outstanding. Other offerings like the Wagyu Beef Tataki was well worth the expense. But mixed in to the great was the blah. The sushi and sashimi mix was no better than some All-You-Can-Eat sushi joints and the Miso soup was just bad - by any standard. In the end, I didn't have a bad meal but felt a little taken by the $120+ price tag given the bad with the good.
This place is for you if one of the following apply:
1.) Your visit to Vegas is on a business trip and you can expense your meal - or better yet -
2.) Have someone else pick up the tab
3.) You just picked up a huge wad of cash at the casino and you don't know what to do with your hard earned winnings.
4.) You're a poor planner, are starving, and there are literally no other dining options short of having a stroke.
Other than that - there are plenty of better price vs. performance options in Vegas in my experience.
PS. Note that there is also a teppenyaki option at this restaurant. Didn't really look at the menu but the place was deserted. Not taking that as a good sign.
