I was first introduced to these chocolates by a friend that grew up in Montreal. Since then every time I visit Montreal I must get my fix. Geneviève clearly focuses on quality ingredients and creates incredibly satisfying bites. Did you ever notice that if something has amazing taste you just need a small bite and are entirely satisfied? Her chocolates qualify, as a single square satisfies my palate perfectly each time! (Granted, I end up needing more satisfaction after the next meal of course!)
My two favourites are the Gianduja (filled with caramelized hazelnut butter) and the Caramel à la fleur de sel (Vanilla caramel with just a hint of fleur de sel to highlight the flavours).
She offers some other delicious flavours as well including Balsamico (which is a balsamic vinegar flavoured ganache), Truffe blanche (white truffle oil ganache), Chai (infused with indian tea, ginger, pepper, star anise and cardamom), Piment (3 types of chili peppers infused), and Érable (Maple butter and maple syrup added with caramelized maple pecans).
There are several other flavours as well, and it is worth sampling your way through all of her creations (albeit one square at a time - you won't need more in a single session).
