  • Order your whole holiday prime rib roast special, as a 109a rib! 4/5 xmas holidays I order a whole 109a prime rib from The Butcher Block. It's a little wasteful in terms of some extra fat included, but the result is a MUCH better prime rib roast for the family holiday meal. In the simplest terms, it's the "old way" top restaurants used to get their prime rib. The roast will come tied, with a large layer of thick thick fat over the top. To prepare the best prime rib ever, cut the string off, and simply peel back the "fat cap" as it's often called, but don't throw this away. Under the fat cap, trim the thickest, hard pieces of fat very thin. Season the beef, very heavy with coarse salt, coarse pepper. I toss in a lot of tiny garlic slices and lay a few sprigs of rosemary on the roast. Now, lay the fat cap back onto the roast and tie it down with string, criss crossing a few times. Roast in the oven until about 1hr to 90 mins before desired internal temp. At this time, take the roast out of oven, cut the strings, and remove the fat cap. Place back into oven and cook to desired temp. The roast will get a nice crust but not overdone. The flavors from seasoning will penetrate the meat thanks to the fat cap melting into the meat. Allow to cool outside of roasting pan. Place roasting pan on top of your 4 burner stove after pouring out the grease only from the pan. leave the juices in the pan. BURN the pan with all 4 burners for a few mins on the stove. Slowly add some beef stock (store bought is fine), using a wire wisk to stir it up, deglazing the sticky burnt spots on the pan. loosen and release all the burnt juices on the pan by wisking. Add more stock, and reduce until desired flavor. strain through cheesecloth, and you have a very tasty Au Jus with a bit of rosemary/garlic flavor, your family will just love.
