This is a great place. The restaurant is tucked away in the Aria resort and it's really attractive inside. The ceilings are super high but with the chandeliers, artwork and different eating spaces, it really feels like a much smaller space. The menu is a bit confusing. There's an ala carte menu, a 4 course fixed price menu with choices, and an 8 course tasting menu (no choices). We opted to order from the ala carte menu.
For my appetizer, I had the grilled Spanish octopus. This was well made but not spectacular. The octopus was tender but I prefer more char on it - mine was so devoid of char that I couldn't tell if it was grilled or not. My entree was the 36 hour wagyu short rib. This is cooked for 36 hours in a sous vide machine. Delicious!
There's a large dessert menu and, of all things, an Absinthe menu! Didn't think of it at the time, but I should have tried one of those... how often do you really get the chance to try that?
