We had trouble finding a solid non-buffet, breakfast restaurant our first half week in Las Vegas. The Sugar Factory in the Paris hotel was the best we found. Yes, we still paid nearly $20 for each entrée, but they were worth it. At the Flamingo, we had to pay the same amount just for bacon & eggs.
The Sugar Factory American Brasserie & Bar is supposed to look like a French café, naturally. There is seating that opens right out onto the strip, but we had to sit at an inner table. My girlfriend and I split the eggs benedict and chicken and waffles.
The eggs benedict came with asparagus on top and a rich but not overwhelming Hollandaise sauce. Instead of an English muffin, the eggs came with creamy scalloped potatoes on the bottom. The waffles were two large Belgium waffles. The chicken was crispy, honey flavored. I've actually never had waffle house chicken and waffles, but I already know I prefer the French twist. But unlike many Americans, I like the French.
