| - If Chipotle and Los Agaves had a baby her name would be Gadzooks. Simple and affordable yet exotic and delicious. A mouth-watering explosion of flavors! Can you say gourmet fast-food?
So many combinations of yumminess at your disposal and for you to create.
There was no line and a huge overwhelming chalkboard featured an array of fabulous fixings. It was too much to absorb, taste-bud overload.
Sauteed spinach mushroom,
creamy goat cheese,
Jalapeño smashed potatoes,
guacamole,
spicy cornbread hash,
hand-made corn and flour mixed tortillas,
6-8 types of chili sauce...wow!
You start by choosing either an enchilada or taco or a combination. I chose two enchiladas. Then choose your fillings: like
shredded pork,
shredded chicken or
shredded short ribs,
you choose a red or green sauce and you have various topping to choose from like:
vinaigrette slaw, creme, cotija cheese, pickled onions, hot sauce for more spice like pico or lava (habanero).
Then more "dressings" like:
buttermilk,
honeysuckle vinaigrette or
jalapeño ranch.
You can dress your dish anyway you want.
If your order is "to stay" your enchilada is placed inside a clay pot and put it in the oven for all the flavors to melt together.

I topped my meal off with a Pacifico Mexican beer and a lime. MMMM
I don't like tip-jars but I tipped here. The staff is friendly helpful and they bus they tables.
Don't forget your pumpkin spice cookie for dessert! A cake like soft cookie decorated with a simple sugar frosting. MMMM perfect ending.
