I am so happy to have attended The Art of Fine Cooking I. I promised myself that when I retire I would learn to cook. This was my choice to start that journey and it was an excellent one. I have learned the basics and the science behind it. (As a scientist, I found this particularly fun and helpful.) Best of all, I have been able to put these learned skills to practical use. Not only have I tried the many "homework" assignments, and repeated the recipes prepared in class, I have been able to make dinner from leftovers or what was in the refrigerator and NOT use the microwave.
