I tried a cannoli, and I ended up tossing it after a couple of bites. The filling did not taste right. I'm not sure if it's because their proportions of cream to ricotta were wrong, the cream was going bad, or a combination of the two factors. But, it was just not right.
There are some lovely bakeries in New York that make wonderful cannoli. Perhaps, the chef might consider a short vacation to go find out what it's supposed to taste like.
