The cliff notes version = this place is amazing!
I am not a ramen expert by any means but I have had it before, and for me, this place dominates. One of my best friends is obsessed with it and I didn't understand why until now. The only thing I have had is the shoya (soy) ramen and it was a religious experience for me and it might be a while before I try anything else.
Imagine a bowl of broth that taste like the most amazing piece of seasoned caramelized roasted pork ever, it's not thick but has that velvety satisfying stock feel that only comes from stewing all that flavor and goodness from bones for endless hours.
Now in the broth, perfectly al dente noodles that soaked up all that awesome flavor. They are al dente, you still have to chew them but they are by no means undercooked. Then take slow roasted pork bellies that are so tender that you could cut it with, I don't know, a piece of grass, and slice it and float in on top. Along with that add just a few slivers of some vegetable things that are cooked so they are just barely firmer than the noodles along with a touch of scallions.
The only thing that would be more porkly satisfying would be a pork loin wrapped in bacon. It is crazy but it somehow reminds me of one of my favorite things in the world, carnitas. Well it hits the same spot at least. It's perfect too because it's got enough fat so you know you are eating pork but it's still lean-ish so you don't feel like killing yourself via hara-kiri after (It's the perfect lunch). I mean I worked out about an hour after the last time I had it, try doing that after a carnitas plate. I love pho but this ramen flipped my noodle soup world on it's head. I can't sleep right now I just want to go back and eat more.
P.S. I have seen this place here before on this site and had it bookmarked but then I saw it pop up in the book "Eating Las Vegas" as one of the best 50 spots in vegas.
