| - Is anything worth an hour wait? Buffet? Sometimes... High end restaurant? Sometime... Oyster Bar? Yes! I have to admit, even thinking of waiting more than an hour for anything is a tough sell but this one might do it for it. After waiting for around an hour and 15 minutes of temptation with slots and cheap tables and without reception (beware at&t and T-Mobile customers), I finally got a seat at the bar.
A dozen oysters on the half shell for $20. Freshly shucked by the cook with a side of lemons and cocktail and horseradish sauce. These oysters were really good. Fresh and plump so you are getting a pretty good deal. It's a good appetizer while you wait for the main attraction, the pan roast (around $25). A creamy tomato and cream sauce with a mixture of southern spices with your choice of meats. The palace pan roast has crab, shrimp, chicken and andouille sausage. You also get to choose your level of spiciness. I love heat so I chose 9 out of 10. After watching Ricardo (the chef) do his magic for 15 minutes with the pan cooking the meats and the sauce boiling and thickening into a thick concentration of flavor, the pan roast was poured into a bowl and topped with a huge dollop of rice. After the first bite, you think, it's good but not worth the wait. Then you keep sticking your spoon back in for more and then you realize, this stuff is good. The creaminess and the flavor of the mixtures of spices continue to kick you in the face (in a good way). The chili flavor was good for me but I suggest to go around the 6 or 7 level. I tried my friend's with this level and you get flavors of sweetness. With the 9 and I guess also 10, you are always getting spice. The meats were not overcooked, mainly the shrimp which was interesting because it wasn't rubbery even though it was cooked for a while. A must get when you are here. The others that looked amazing were the gumbo and bouillabaisse.
As for service, the waitress was very nice and friendly. She took our orders quickly and was helpful throughout the meal with water refills. The chef, Ricardo, was the life of the party though. He was sarcastic and entertaining to watch. Even as he was joking around with the customers, he was serious about the food and made everything, including shucking oysters and clams, very professionally.
So expect to wait. If the line is past the ATM machine, expect a really long wait. Expect great flavor. Expect a filling meal and expect to want to come back again and again. I am a convert and want to come back during every Vegas trip. The wait is gonna be a struggle but if it is not over an hour and a half, you will see me in line. A solid 5 stars and even though I want to dock a half star for the wait, can't blame a restaurant for having a following and the food pretty much replenishes that star back.
