I only stopped here for the chocolate truffles and will not be reviewing ice cream or other products at the shop.
I consider myself a chocolate connoisseur. When I travel (abroad or at home in the states), I sample the local artisan chocolates everywhere I go. Specifically, I look for a chocolatier who makes fresh truffles, who knows how to do dark chocolate, and who is creative and careful with natural flavors.
This was my final chocolate stop on a self-designed chocolate tour of Montreal. The chocolatier favors an assortment of various caramel flavors. While I love caramel, I wished for a more diverse array of flavors. Fortunately, nearly all truffle flavors here are available in both milk and dark chocolate. The highlight here is a tree shaped truffle with a spruce-like flavor. So interesting. The disappointment: the dark chocolate is a touch grainy and has hints of bitter. Dark chocolate is typically only bitter when the cocoa bean has been burned/over-roasted. Chocolatiers tend to cover this with vanilla. Too much vanilla changes the constitution of the chocolate. Still, the chocolate here is decent and reasonably priced for the quality.
