In this case, Olivier Brouillet, the owner learned from celebrity chef Joël Robuchon, and instead of opening his own expensive restaurant on the strip, decided to share his talent with the rest of us.
I've always had an amazing experience there, the food and service is excellent, and the owner comes out and often talks to customers about their food, his life, and his love of cooking.
