| - I've been a big fan of Chuck Hughes for a while now and tried, very successfully, many of his recipes from the show. So, when visiting Montreal last week, we had to attempt to get into Garde-Manger. We tried to get a reservation, unsuccessfully, for over a month. Nevertheless, we found the place (more fun since it does not have a sign). Our plan was to come early - we did not expect to get a table during the prime hours but were prepared to eat as early as 5pm - if necessary. The maitre d was very nice and suggested that he might be able to seat us around 8pm - which was definitely worth the wait. And when we came back, the restaurant was full, but we were seated, as promised. Unless you come with more than 2-3 people and must have a table, it is a big part of the experience to eat at the bar (in either of the rooms). We got a chance to talk to people seated next to us - young chefs from Toronto, who come every few months to pick Chuck's brain, so to speak. We also had a very entertaining conversation with the chef and the bartenders on the other side of the bar. The music selection - which is awesome, everything from Rolling Stones to Gypsy Kings to REM - is a great conversation starter! We also got interesting info on how it all started (the second restaurant just opened and the new show is being taped). And then we ate! The food was as awesome as we hoped for! From simple oysters (two scallops on a half shelf were added as a very pleasant surprise) to beautifully constructed smoked salmon and caviar appetizer to the masterpiece of short ribs - everything was pretty much highly perfected (to those who complain about salt - that is what seasoning is and it was exceptionally balanced). Suggest to try a bloody mary which comes with a full crab leg!
