| - EVO is gorgeous. The EVO Salad is nothing less than exceptional -- one of the best salads I have ever eaten. Warm, crispy Brussels sprouts, kale, pancetta, Bosc pears, goat cheese, pine nuts, & aged balsamic. Taste bud orgasm. I came for restaurant week: got this salad, the espresso-crusted steak, and Nutella budino. The main course and dessert were delicious, but the EVO salad was hands down the star of my entire experience! I sat at the bar so I can't speak for table service, but my experience was fantastic. They have comfortable, aesthetically pleasing bar stools, gorgeous chandeliers throughout the space, at least two large HD flat screen TV's playing the latest sports or popular show, and a nice little patio outside for anyone who can't go an hour or two without a cigarette.
EVO is a place I can see myself driving the 20 min from my house to eat/drink at, because although it's located in Scottsdale, it's blessedly not a "Scottsdale" establishment, at least not in the bar area. I found it to be filled with fellow industry folk who are intelligent, know a lot about food, wine, cocktails, etc, and don't care about appearances as much as one might expect in an establishment in this zip code.
EVO is not only a beautiful establishment with outstanding food, they also have an impressive hold on the industry. I believe there are industry offerings most nights: Tuesdays offer $5 tap wines, $4 Fernet and Chartreuse!!, and discounted beers for industry associates, $20 for a bottle of wine and a pizza on Wednesdays (maybe for everybody?), etc. Although we don't need an incentive to frequent EVO, the fact that they respect their fellow servers, bartenders, and restaurant workers is one of the many ways they keep us coming back for more.
