I grew up in Markham where there's Chinese food everywhere, so there hasn't been a lot of places that stood out in Chinatown. The only exception is the hand pulled ramen w/ sliced beef from Homemade Ramen.
As mentioned in previous reviews, the handmade noodles were fresh and suitably chewy; I quite enjoyed it w/ the light broth, which was flavored w/ cilantro, daikon, and scallions. There were lots of it as well, unlike the sliced beef, but you can pay more to add extra meat.
Overall, it's a great bowl of noodles that's cheap & filling. And it's better than the Lan Zhou Ramen down the street.
