This is a Japanese restaurant operated by non-Japanese folks, first of all. That is a serious problem for any Japanese person or the Japanese food experts.
I had Chirashi today and I was very very disappointed. Even though I asked the sushi man before I ordered my Chiarashi if the fish are all fresh and he of course said "yes", 2/3 of the fish I got on my Chirashi were not fresh. There were Tuna, Salmon and Yellow tail, 3 pieces each to make it 9 pieces and not 10 pieces as the menu says. Yellow tail was okay, but the tuna and salmon looked like they were sliced at least yesterday and just unwrapped from saran wrap.
Another disappointment is the soy sauce they use. It's not Kikkoman, it's not Yamasa. I think it is a Chinese soy sauce which is totally not suitable for sushi because the flavor is much different from the Japanese soy sauce. Wasabi was tasteless. Other than the fish and the rice, there were only the fish, 1 leaf of shiso, and shredded daikon. Very boring presentation for a Chirashi. My lunch companions all had cooked dishes from the Hibachi menu, and they looked good and they all seemed to be enjoying their food. This place is probably not for sushi but for Hibachi grilled dishes.
