  • Don't bother. It's worse than a buffet at home. The good reviews and the staged food photos are from years ago. Not indicative of the current state at all! This might have been good once, but I fear it's gone downhill and no longer reflects the quality and excellence of the MGM brand. Six of us were eager to try out the famous Vegas buffets last night. We went here assuming Mandalay Bay would be a lock. Hostesses were excellent, prices reasonable. At 7:30pm we found a few glum patrons picking at their food. I saw a few steam tables and searched for the main buffet area. But a few steam tables, a salad bar and a little sushi/fruit area were all there was. This is smaller than a buffet back home! After trying and failing to eat, the rest of the party concentrated on getting their money's worth from the bottomless beer. The food was bland, meat options overly fatty, variety severely lacking. I found the manager and walked her through the most serious issues. - bartender had a leg and butt cheek up on the salad bar table. - salad bar was thrashed, with ingredients and dressing everywhere. Two staff were standing by the salad bar. They never moved to clean it up. Manager said she usually cleaned it herself but hadn't had a chance to get to it. - two platters of sushi contained no fish, were broken and smashed, and fell apart. Manager said the rice wasn't made correctly, but she couldn't do anything about it. - multiple serving spoons and tongs had handles laying in adjacent food. Food was dropped and dropped across the serving areas. Manager also said she usually did that. Other workers wouldn't move to clean anything. - no prime rib. Instead a small beef roast was present. Our deer-dressing manly men could hardly cut it, it was so tough. Unable to chew at all. Manager's response was that they had steak knives upon request. Throughout all this the manager was very nice and understanding. She was able to refund one of our bills, but not the others for folks who had tried and failed to eat. What would fix this? A relentless focus on cleanliness, excellence and attention to detail. If you have little to work with, at least do it the very best. Don't let handles lay in food, have someone dedicated to continually cleaning up serving areas and spills on floors. Demand quality for the small selection of food available. Care! Mandalay Bay has plenty of other great food options. But the Bayside Buffet is truly the worst food I've found in Vegas.
