  • This place has an interesting concept but, from entering the restaurant to being seated to prepping food and waiting for it to be cooked seems like a lot of wasted time and money. First they should have you start at the line to order food then seat yourself after food order is in. Also based on my experience and working F&B operations for over a decade in fine dining you should not allow guest mess with raw food in this way based on cross contamination. They should have a couple of people based on a chipotle ordering line to put your food together. This would eliminate any type of cross contamination. Also this would look more professional as well put my mind at ease for health and safety purposes. They could then hand off food for chef to cook. Eliminate the person from seating guest because this made no sense. This company is obviously not local and they thought sense they are opening a location in Las Vegas makes so much sense to put in a bar. Well surprise a bar makes no sense in a place like this. You can offer beer and wine(sake) and probably make the same if not do better since you are devoted to having the ridiculous bar area. This place needs an overhaul and you need people in there who actually know the business of restaurants rather than some high schoolers who think they know how to run Food and Beverage. They will never be successful if this place isn't executed correctly. Also prices need to be adjusted meaning reduce by a dollar in everything including 2.79 for a soda give me a break you took the Chipotle model and are charging at a premium something that isn't even near the quality of chipotle. If you are going to rip off an idea than it needs to executed correctly. Do not think you can change the genre of food and do it the same way and think you can be more successful. Good luck I would think about trying this place if they would consider making some of these changes.
