The Texas Melt consists of angus beef brisket (wonderfully tender, moist, and flavorful,but not soggy or overcooked), pepper jack cheese, roasted red peppers,Texas red sauce and grilled onions on buttery Texas toast, and tasty but not too hot picked peppers on the side-so incredibly good and so bad for you!
The place has cool bbq headquarters feel to it and the staff is friendly and knowledgeable.
My only quibble is the 5 cheese Smack-a-Roni-mac n cheese, which nobody at our table liked. I'm pretty tolerant of processed cheese but it had a very yucky cheese wiz taste to it not the 5 cheese mac they're going for. I almost had the porkstar sandwich which is crammed with it.
That aside the brisket was just awesome. It a cut that's so difficult to barbecue that it's a measuring yard of a good BBQ restaurant. Here in town I've had overcooked crumbly brisket and stiff as a board dry brisket (from the now closed Pot Liquor). This brisket is just perfection and I will be back!
