Wisconsin cheese is amazing & this is one of the top cheese stores in Madison. I've never tried their sandwiches & don't plan to. It's their cheese that is absolutely incredible. It's better than anything I've ever had & I cannot find anything as good in NYC (for aged Wisconsin cheddar, I haven't found better). Yesterday, tried the Hook's 12 year Sharp Cheddar Cheese (a World Champion Cheese title winner according to the gold label). Oh yeah, this is true gourmet cheddar cheese! What makes it so special? Well, for one, it's slightly crunchy. This is due to calcium lactate crystals formed during the long aging process. And the texture is firm almost dry (not sticky or pasty). The flavor is super-intense. There's definitely something to this cheese! Also, I'd probably never normally eat something called "Cow Pie" but I'm so glad I did. Carmel, pecans & fresh milk chocolate. Simple but OMG. So fresh, delicious & absolutely decadent.
