Cuco's is totally mediocre. The margaritas are pretty good, but the margarita sizing is quite goofy. The "regular" size is about 8 ounces, then the "medium" shoots up to nearly a fish bowl. Odd.
I've eaten at Cuco's on a handful of occasions. The service is always prompt, and the servers are fairly friendly but sometimes a little distant. The food, though, could use improvement. I've tried various enchiladas, tacos, quesadillas and burritos. Every dish sort of seems like a TV dinner. The food isn't bad, but it's definitely lacking in quality and flavor.
More recently when I went to Cuco's, I ordered the spinach quesadilla. The server told me that was a good choice because the spinach at Cuco's was "all natural." What does that mean? The spinach is organic? Raw and never frozen? Not canned? Not GMO? Locally grown by a local farmer? I find it a little frustrating that a restaurant would throw around trendy buzzwords about its food to its customers even though the buzzwords are ambiguously vague and don't help the customer understand anything about the food. Either say exactly what it is or say nothing at all.
Go to Cuco's for the margaritas, but don't expect incredible food.
