Our family loves warm cookies out of the oven, but hardly make them because you can't just stop at a couple and who wants to throw out a bunch of cookies to avoid the temptation. Appalachia Cookie Co. just opened close to one of our usual restaurants, so we decided to give it a try. At 8:30pm on Sunday the place was empty but were quickly greeted as a fresh batch of cookies was unloaded. We were told we could choose from the case or have our choices freshly baked in 15 minutes. The options we wanted just came out of the oven so we chose from the case. A half dozen cookies totals to about $10. A little pricey, but one bite in and it's worth it. We tried: the blueberry white chocolate oatmeal cookie (tastes like a blueberry crumble) cheesecake (all the taste and texture of cheesecake but in cookie form) classic chocolate chip (nice molasses flavor) and the Ron Swanson (like a pancake breakfast in a cookie). After all said and done we couldn't pick one favorite flavor.
