  • Summerlin is starting to overflow with yummy brunch spots! Echo and Rig is a high quality butcher AND great dinner/brunch spot. 1. If you have a dog, ask the butcher for marrow bones. Your dog will love you for this. 2. I had always wanted to make pulled pork and the butcher was kind of enough to butcher a pig for me AND write out very detailed instructions for an upcoming dinner party that turned out to be a culinary success. 3. Order the short ribs on their brunch menu. It never disappoints.
