  • Let me set the scene- 8 tispy/drunk women, blissed out from the Backstreet Boy Concert, and HUNGRY. 2:30 AM. A line that looks like a 2 hour wait (12 stools total at this Osyter Bar, 12 people in front of us- and honestly that number keeps changing as people filter in an out to gamble and drink while they wait). I hate to proclaim this, but despite the wait- this Divey Palace Station meal is a Vegas must try. My friends had been here many times and I had not, but they insisted despite my begrudged hangry attitude that I HAD TO TRY the Pan Roast, a Osyter Bar version of creamy tomato creole style etouffee with meats and seafood- topped with rice. At this point I was so hungry I would have been happy with a hot dog I found on the ground. I wasn't in the mood for that type cajun/creole of food at the time but went along. By the time we made it to the front of the line (2 hours)- I was fuel tank empty, my feet hurt from the heels and standing, and wasn't speaking to anyone. Also my eyelids felt like they were metal shutters that just wanted to see the hotel bed. I clamored up onto the stool, watched chef Ricardo made us 6 heaping bowls of Pan Roast in various flavors (each bowl takes about 15 mins to make, they do it in front of you MORE WAITING), and then.......... I took my first bite. Well, it was good. Pretty good actually- but not mind blowing. Spicy level 4 suited me ( meduim spice lover), and it was blisteringly hot. The more I ate, the better I felt, and the more I liked it, but it was a big bowl and I was reallllly tired so I only made a small dent. I ended up taking 3/4 of the food home ($30 pan roast why not?) even though I figured it was get thrown in the trash the next morning when we went to brunch somewhere else. This is when the funny thing happened. Had I wrote that review that night, Osyter Bar was 3.5 star experience for me. The next morning, I had a few bites of the left overs and it was a 4. Three days later, back home from vacation, I crave it. No joke! I want to fly back there to eat it again. RIGHT NOW. So, Osyter bar, you got me- a soild 5 and bewilderment from me, but 5 you get. So that is my story. Maybe there's crack in there, or maybe it a tough sell that grows on you over time. All I know is, you all need to try it. Next time I go, it's sneakers, folding chair, and sweatpants.
