  • Kudos to Fuji to buck the trend of open format dining rooms with natural lighting. Instead, they took a wide open space and compartmentalized it adding faux waterfalls, faux timbers, a sushi bar, a regular bar, dining room and a separate hibachi room all under one roof. A literal maze with blue, green, and red lit ceilings. I simply don't understand it. Menuwise, Fuji has your standard offerings-appetizers, rolls, sushi, sashimi, as well as a few entrees. We opted for goyza, the sushi appetizer, yellowtail roll and a tuna specialty roll. The rolls were well made and the sushi was cut well. The specialty toll, Crazy Tuna, needed something more as the "crunch" that it was advertised with was missing. Service was attentive although a little confusing as our waitress came to our table talking into her microphone (they all wear earpieces) and we thought she was addressing the table. While the food was ok, the whole experience came off as gimmicky-from the decor to the chef walking around with the top of his hat on fire (at least I hope it was a gimmick!). Just a strange experience overall.
