| - The Colectivo cult continues--and it's for a good reason. Colectivo has hit upon the design features that people love (garage door windows, fireplace, mix of comfy chairs and workspace) and quality bakery from Troubadour. If you love espresso and coffee, Colectivo provides itself on prepping each item correctly. If you want to drink your espresso shot in the fancy way, they even have sparkling water on top so you can down your espresso and then follow with sparkling. The muffins and cowboy cookies are some of the stars of the show in their baked goods case.
On a Sunday at 3PM, Colectivo was a hopping spot--perhaps a little too much. The cold case was empty except for 2 salads, and the pastry case only had only 5 items left. One employee was working on cleaning glassware, as they were nearly out, and the other employees had a large backlog of drinks. Some patrons had trouble picking up their drinks but I'm not sure if this was the fault of the employees--I think some people got tired of waiting, sat down, and then didn't hear their name when called. Still, if this is what Colectivo is like on Sunday at 3 and they still have a few hours of operation left, perhaps they need to increase their bakery stock.
Most first time customers become repeat customers because the building design and product quality is higher than many other coffee shops. A recommended stop in Madison!
