Ordered: Fresh shrimp rolls, Grilled Pork Rice Vermicelli, Grilled Pork Chop w/ Fried Egg Rice

Ambiance: Very nice and clean place with spaciously-placed tables. Place was running at capacity on a sunday afternoon with about a 10-15 minute wait. There were about 3 servers taking care of the whole place and seemed a little overwhelmed but they were friendly and tried to check in on our table whenever they could.
Food: The shrimp rolls are certainly fresh with mosit rice wrappers, soft noodles, a hint of mint, and savory peanut sauce. My vermicelli bowl was good with the pork being grilled on skewers which is new to me. The meat was a little dry but had a nice soy-lemongrass marinade with a hint of char-grilled flavor. The noodles, however, were a little skimpy and could be devoured in 4-5 mouthfuls. The grilled pork rice plate had 2 pork chops which partially compensates for the fact they're super thin however because they're so thin, they aren't as hearty and tend to overcook really easily. The fried egg was also cooked through and not a runny sunnyside-up like you'd hope.
Setting aside some of the cost-saving measures taken by Pho Van, the flavors are good and generally true to the genre. If you're craving vietnamese food, it'll hit the spot.
