As someone who enjoys cultural history I found this exhibit to be very interesting and enjoyable. It's a bit pricey (especially if you choose to buy the souvenir pictures), but I think worth seeing once. When you arrive you are given a little booklet containing information about an actual Titanic passenger. At the end of the exhibit you can find out if your passenger survived (mine did). There are several rooms that you walk through displaying objects from the wreckage, a recreation of the different cabins for 1st, 2nd, and 3rd class, a recreation of the famous staircase (where you can have your picture taken), and a cold room with an iceberg (this I found to be kind of gimmicky).
Check in on yelp for a free audio guide. I wouldn't have paid extra for the audio guide, but it certainly was nice to get it for free!
In Vegas there are an abundance of night time activities and shows. If you are looking to do something during the day (besides drinking and gambling, of course), this is a great option.
