Tripas (ask for deep fried) tastes like the best bacon you've ever eaten. Meaty, crispy morsels on a taco is the best thing on the menu. Pibil and carnitas are pretty much marinated pork shoulder, so it's very tender and flavorful and looks similar to brisket. I found the soyriza to be too salty, the al pastor is pretty tasty because of the sauces, and the street corn is great, but the standout for me will always be the tripas!
