I thoroughly enjoyed my visit to Spirit Tree, it was not only a nice little delicious escape but it was quite an informative experience.
Located in Caledon just outside of Toronto the drive alone is a breath of fresh air... Rolling green hills, farms and scattered quaint towns line the dirt roads on your way. Once you pull up you immediately see the beautiful apple fields and unique custom made structure. I conveniently arrived as the guide was explaining how it was made out of straw which provides excellent insulation apparently.
Though somewhat on the small side the interior is quaint and rustic with home grown products adorning the shelves and a variety of stone oven baked delicacies. Take your time perusing all the delicious treats they have to offer... Cider is just the tip of this iceberg here.
The staff truly makes the experience a memorable one, upbeat and incredibly knowledgable they guide you through the array of delightful menu items available and there is a variety so the help is welcome. The tour of the facility is one to remember with Tom the owner leading the way, I truly learned so much about cultivating prime apples and the labour intensive process involved with making their unique cider. I never knew how intricate and delicate the process is and will never look at cider in the same way again... The immense energy and passion it takes to make this cider is apparent in every sip.
Spirit tree truly captures the spirit of this age old craft setting them apart from all the rest. You better believe I will be venturing back shortly for another little getaway from the everyday
